Lemon Slice

This zesty no bake slice is simple to make but tastes delicious! Perfect for lemon lovers, with lemon rind and juice, as well as our citrussy lemon shortbread.

225g Dean’s Lemon Shortbread, crushed finely

70g Butter

25g Light Brown Sugar

75g Condensed Milk

Grated rind of 1 Lemon

1 tablespoon of Lemon juice (plus extra for the icing)

125g Icing Sugar

Follow The Steps

Line and grease a 7 inch square shallow tin.

Put butter and sugar in a pan and heat gently, stirring occasionally until melted.

Stir in condensed milk, lemon rind and 1 tablespoon lemon juice.

Reserve 1 tablespoon of crumbs for the top and stir the rest into the pan.

Put the mixture into the tin and press down using a spoon. Chill for 30 minutes.

Mix icing sugar with lemon juice until it thickly coats the back of a spoon.

Spread over the base and sprinkle with reserved crumbs.

Leave to set for 24 hours. 

Remove from the tin and cut into squares.
